Cucumber, Tomato, Pepper & Onion Salad

This is one of my favorite side dishes, loaded with anti-inflammatory benefits, to make year round. It takes just a few minutes to make and is delicious and fresh every time.

Servings 1

Ingredients
  

  • ¼ cucumber sliced and quartered
  • 8 grape or cherry tomatoes halved
  • ¼ green or colored bell pepper cut into strips
  • 2 Tbsp red onion diced
  • ½ Tbsp fresh basil leaves finely diced (optional)
  • Salt & pepper to taste
  • Olive oil & seasoned rice vinegar to taste

Instructions
 

  • In a salad bowl, toss cucumber, tomato, bell pepper, onion, basil and seasonings until well combined.
  • Top with olive oil and vinegar to taste. Enjoy!

Notes

Add fresh spinach and larger basil leaves to make it more of a leafy green salad.
