Cucumber, Tomato, Pepper & Onion Salad
This is one of my favorite side dishes, loaded with anti-inflammatory benefits, to make year round. It takes just a few minutes to make and is delicious and fresh every time.

Ingredients

cucumber
sliced and quartered

grape or cherry tomatoes
halved
¼
green or colored bell pepper
cut into strips

Tbsp
red onion
diced
½
Tbsp
fresh basil leaves
finely diced (optional)
Salt & pepper
to taste
Olive oil & seasoned rice vinegar
to taste
Instructions
In a salad bowl, toss cucumber, tomato, bell pepper, onion, basil and seasonings until well combined.
Top with olive oil and vinegar to taste. Enjoy!
Notes
Add fresh spinach and larger basil leaves to make it more of a leafy green salad.
