Heat olive oil in a medium skillet over medium heat. Add ham, green pepper and red pepper. Sauté for 3 – 5 minutes or until peppers are softened, adding pineapple just to warm.
In a separate large skillet, scramble eggs with salt and pepper to a soft scramble.
Add ham, peppers and pineapple.
Divide into 4 servings and top each serving with hot sauce to your liking.
