Blueberry Chia Pudding Parfait

This delicious breakfast, snack or dessert gives you great tastes with natural sweeteners, crunch and delicious fruit flavors.

Ingredients
  

  • 1 cup plain coconut or Greek yogurt
  • ¾ cup coconut milk
  • 1 Tbsp pure maple syrup
  • ½ tsp vanilla extract
  • 3 Tbsp chia seeds
  • 1 ⅓ cup blueberries + extra for garnish
  • 2 Tbsp water
  • 1 Tbsp lemon juice
  • 1 packet or 1/2 tsp powdered stevia
  • 1 ¼ Tbsp unsweetened shredded coconut toasted
  • Chopped nuts optional

Instructions
 

  • In a medium bowl, combine first 5 ingredients. Cover and refrigerate at least 2 hours or overnight.
  • Combine blueberries, water, lemon juice and stevia in a large microwave safe bowl. Cover and microwave for 90 seconds.  Stir, cover and microwave for 30 more seconds or until blueberries burst. Cool completely.
  • If using nuts, coarsely crush. Evenly divide crushed nuts, blueberry mixture and chia pudding among 4 dishes or glasses. Top each parfait with shredded coconut and extra blueberries.

Notes

If you're not a fan of blueberries or they're not in season, try your favorite fresh berry instead.
