Pomegranate & Maple Vinaigrette

This fresh, sweet vinaigrette recipe comes straight out of The Official Anti-Inflammatory Diet Masterclass. Enjoy it over a salad or anywhere you love a vinaigrette with fresh flavors.
Course Dressings

Ingredients
  

  • ¾ cup pomegranate seeds
  • ½ cup olive oil
  • ¼ cup pure maple syrup
  • 1 Tbsp lemon juice
  • 1 Tbsp white balsamic vinegar
  • 1 tsp Dijon mustard
  • pinch of sea salt
  • Stevia to taste optional

Instructions
 

  • Place all ingredients in a blender. Blend on low speed, gradually increasing speed.
  • Continue blending on high for 30-60 seconds or until your dressing is smooth and all pomegranate seeds have been blended. For a sweeter flavor, add Stevia to taste.
  • Store in a covered container in the refrigerator for up to 1 week.
