Creamy Avocado Dressing (or Dip)

On an anti-inflammatory diet, people often struggle to find a creamy dressing for a salad or a dip. This recipe will not disappoint. Use it as a delicious salad dressing or serve it with veggies as a dip! It will definitely brighten up an appetizer table!

Ingredients
  

  • 1 ripe avocado peeled, pitted and chopped
  • 1 Tbsp olive or avocado oil
  • ½ cup water
  • 1 tsp honey or pure maple syrup
  • 1 tsp Dijon or yellow mustard
  • 1 large lemon for 1 tsp zest and all juice
  • 1 clove garlic
  • 1 tsp onion powder
  • 1 tsp salt
  • ¼ tsp pepper

Instructions
 

  • Add all ingredients to a blender or food processor, blending until smooth and creamy.
  • If dressing is too thick, add a little more water to thin it.
  • Store in a covered container in the refrigerator for up to 1 week.
