Italian Citrus Dressing is a fantastic flavorful lemony fresh tasting Italian salad dressing with an excellent taste combining olive oil, fresh lemon juice and Italian herbs.

This is one of my favorite salad dressings. It works on a simple salad or with your favorite protein with a cool salad on top. It is also delicious with your favorite salad that includes fruit or as a marinade for vegetables!  Always make more salad dressing than you’ll need. It takes no longer to mix a big batch, and it means tomorrow’s salad will be ready in minutes.

Equipment

  • Blender or Food Processor

Ingredients
  

  • ½ cup olive oil
  • Juice from 1 lemon
  • 2 cloves garlic finely chopped or minced
  • ½ tsp paprika
  • 1 Tbsp dried thyme
  • 1 tsp salt
  • 1 packet Stevia
  • 1 Tbsp dried tarragon
  • 1 large tomato chopped

Instructions
 

  • Place all ingredients in blender or food processor and blend for about 30 seconds or until well combined.
  • Store in a covered container in the refrigerator for up to 1 week.
